by the baker behind ‘2024 Britain’s Best Loaf', Tom Martin, who
has recently become the Head Baker for the Bread Factory Manchester
under the Gail's Bakery Brand.
Fancy yourself as a bit of a baker? If so, this class is a must -
perfectly timed to get you started on an new year hobby! What could
be more wholesome than making your own loaf… making your own loaf
and spreading it with your own homemade jam, of course!
Not only will Tom will be sharing the secrets of his award-winning
loaf, deep-pan garlic, rosemary and seasalt focaccia, you will all
be making one alongside him: making, baking and taking away with
you. Additionally, you will also take away a slow-fermentation
sourdough loaf to bake at home and you will make, shape and fry
doughnuts. After a break for lunch, Tom’s winning focaccia
naturally, paired with a charcuterie board and a glass of wine, our
in-house chef will take you through making your own jam and
custards, a little sweet something to fill your doughnuts
with!n

Your ‘dough’ will be in safe hands: Tom is the Head Baker and
manager at 4 Eyes Patisserie and has 19 years of experience in the
baking industry. He has a huge passion for real bread, specialising
in long-fermentation methods and using wild-farmed flour; dedicated
to preserving the heritage of bread, making and sharing his
knowledge and experiences with others, especially bread enthusiasts
and amateur bakers. 2024 was a rollercoaster of a year for Tom who
won the accolade of Britain’s Best Loaf 2024 🏆 alongside, Winner of
Best International Loaf 2024🏆, Winner of CBA Best Sourdough 🏆 and
Winner of CBA Best Tin Bread 🏆. CBA - Craft Baker’s Association;
Tom was also nominated as one of the four finalists shortlisted for
Baker of the Year by the Bakery Industry Awards.
